spicy mango sauce

Spicy Mango Sauce

Do not use a blender or a food processor to mince your mango in this recipe. There is more damage done to the cellular structure in a blender, which can create a noticeably different taste and texture. I'll always believe my spicy mango sauce tastes better because I cut it by hand.

Ingredients:

- 1 ripe mango

- 1 clove garlic

- 1/4 cup olive oil

- 1 tsp chili powder

- 1/2 tsp cumin

- Salt and pepper to taste

Direction:

1. Peel and chop the mango into small pieces. Set aside.

2. In a small saucepan, heat the olive oil over medium heat.

3. Add the minced garlic, chili powder, and cumin to the saucepan. Stir and cook for 1-2 minutes until fragrant.

4. Add the chopped mango to the saucepan and stir to coat it with the spices and oil. Cook for 2-3 minutes, until the mango begins to soften.

5. Using a fork or a potato masher, mash the mango pieces until you have a chunky sauce consistency.

6. Season the sauce with salt and pepper to taste. If you want a spicier sauce, you can add more chili powder.

7. Cook the sauce for an additional 5-7 minutes, stirring occasionally, until it thickens.

8. Once the sauce reaches your desired consistency, remove it from heat and let it cool for a few minutes.

9. Serve the spicy mango sauce as a dipping sauce for meats, vegetables, or chips. You can also use it as a marinade for chicken or shrimp.
