Spicy Salmon Bowl

Spicy salmon is the perfect topper for a brown rice bowl. The rest of the components here are optional (though we are pretty partial to those quick pickled cukes), so feel free to get creative!

Ingredients:

- 1 salmon fillet

- 1 cup cooked quinoa

- 1 cup chopped broccoli

- 1/2 avocado, sliced

- 1 small red onion, thinly sliced

- 1 tablespoon olive oil

- 1 teaspoon chili powder

- 1 teaspoon garlic powder

- Salt and pepper, to taste

Direction:

1. Preheat your oven to 375°F (190°C).

 

2. In a small bowl, mix together the chili powder, garlic powder, salt and pepper.

 

3. Place the salmon fillet on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle the spice mixture on top.

 

4. Bake the salmon for 12-15 minutes, or until it flakes easily with a fork.

 

5. While the salmon is baking, cook the quinoa according to package instructions.

 

6. In a separate pan, heat the remaining olive oil over medium heat. Add the chopped broccoli and cook for 5-7 minutes, or until tender.

 

7. Assemble the bowl by placing the cooked quinoa in the bottom, followed by the cooked broccoli, sliced avocado, and red onion.

 

8. Once the salmon is cooked, remove it from the oven and let it cool for a few minutes. Once cooled, break the salmon into chunks and add it to the bowl.

 

9. For an extra kick of spice, you can sprinkle some more chili powder on top of the bowl before serving.

 

10. Enjoy your spicy salmon bowl as a healthy and delicious meal!
