Strawberry Balsamic Chicken Thighs

Ingredients:

- 4 chicken thighs

- 1/4 cup balsamic vinegar

- 1/4 cup olive oil

- 1 tsp dried oregano

- 1 tsp dried thyme

- 1 tsp garlic powder

- Salt and pepper, to taste

- 1 cup sliced strawberries

Direction:

1. Preheat your oven to 375 degrees Fahrenheit.

2. In a small bowl, mix together the balsamic vinegar, olive oil, dried oregano, dried thyme, garlic powder, and a pinch of salt and pepper.

3. Place the chicken thighs in a baking dish and pour the balsamic mixture over them, making sure they are evenly coated.

4. Cover the dish with foil and let it marinate in the fridge for at least 30 minutes.

5. Remove the chicken from the fridge and let it sit at room temperature for 10 minutes.

6. Meanwhile, preheat a large skillet over medium-high heat and add a tablespoon of olive oil.

7. Once the skillet is hot, add the chicken thighs and sear for 3-4 minutes on each side, until golden brown.

8. Transfer the chicken to a baking dish and pour the remaining marinade over the chicken.

9. Place the sliced strawberries on top of the chicken thighs.

10. Bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked and the strawberries are soft and caramelized.
