Sweet and Sour Chicken Stir Fry

Bright and colourful, this Sweet and Sour Chicken Stir Fry is super fast to make! The sweet and sour sauce is truly like what you get at good Chinese restaurants, but not tooth-achingly sweet. This is not a deep fried version of Sweet and Sour Chicken, it’s a much healthier stir fry.

Ingredients:

- 1 lb chicken breast, cubed

- 1 red bell pepper, sliced

- 1 green bell pepper, sliced

- 1 onion, sliced

- 1 cup pineapple chunks

- 1/4 cup soy sauce

- 1/4 cup rice vinegar

- 1/4 cup brown sugar

- 1 teaspoon ginger powder

- 1 teaspoon garlic powder

- 2 tablespoons olive oil

- Salt and pepper to taste

- Optional: Rice or noodles for serving

Direction:

1. In a small bowl, mix together soy sauce, rice vinegar, brown sugar, ginger powder, and garlic powder until well combined. Set aside.

 

2. Heat olive oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-6 minutes.

 

3. Add the red and green bell peppers, onion, and pineapple chunks to the skillet and stir fry for an additional 2-3 minutes.

 

4. Pour the sweet and sour sauce over the chicken and vegetables, stirring to coat everything evenly. Let it simmer for 2-3 minutes.

 

5. Season with salt and pepper to taste.

 

6. Serve the sweet and sour chicken stir fry over rice or noodles, if desired. Enjoy!
