This teriyaki chicken stir-fry is something to make when you just don't know what to cook.
Ingredients:
- 1 pound chicken breast, cut into bite-sized pieces
- 1 tablespoon olive oil
- Salt and pepper
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 onion, thinly sliced
- 1 cup broccoli florets
- 1/4 cup teriyaki sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground ginger
- Cooked rice for serving (optional)
Direction:
1. In a large skillet, heat olive oil over medium-high heat.
2. Season the chicken breast with salt and pepper, then add it to the skillet. Cook for about 5-7 minutes, until the chicken is fully cooked and browned on the outside.
3. Remove the chicken from the skillet and set it aside on a plate.
4. In the same skillet, add the sliced bell peppers, onion, and broccoli. Cook for 4-5 minutes, until the veggies are slightly softened.
5. While the veggies are cooking, make the teriyaki sauce by combining the teriyaki sauce, garlic powder, onion powder, and ground ginger in a small bowl.
6. Once the veggies are cooked, add the chicken back into the skillet and pour the teriyaki sauce over everything.
7. Stir everything together and cook for an additional 2-3 minutes, until the sauce is heated through and the chicken and veggies are coated in the sauce.
8. Serve the teriyaki chicken stir-fry over cooked rice, if desired.
